Salads that pair well with Curry.

Cucumber Tomato Salad - Prep: 10 mins

Ingredients:

1 English cucumber sliced or diced.

1 large tomato (cherry tomatoes also work)

1/4 red onion diced

1/2 a lemon juice

Salt and pepper to taste.

1 tablespoon olive oil

Hand full of fresh cilantro, chopped

Instructions:

Toss well to coat all ingredients.

Refrigerate for at least 20 minutes before serving. Enjoy!

 

Carrot salad - Prep: 10 mins

Ingredients:

3 cups shredded carrots (feel free to grate your own)

1 finger chili chopped (optional). Serrano Chile is an alternative.

1 tablespoon olive oil

½ lemon juice

¼ teaspoon cumin seeds

¼ teaspoon sugar or sweetener of choice. This helps offset the tangy flavor.

Hand full of fresh cilantro, chopped

Salt and pepper to taste

Instructions:

Mix all ingredients well and serve. Enjoy!
